Tiramisu is rightfully considered one of the most popular desserts of world culinary. Delicate and airy, it was created for that. to give a good mood. And to visit Italy and not try a real tiramisu is just a crime.

According to the classification of desserts, it cannot be attributed to either cakes or pastries. There is little by little in it. and from another. It includes three components that make its taste unforgettable:

  • cream cheese - mascarpone;
  • savoyardi soaked in any strong alcohol;
  • coffee cream. eggs, sugar and cocoa powder.

Quantitative composition:

  • a pound of mascarpone;
  • pack of “Savoyardi”;
  • 4 eggs;
  • 250 g of powdered sugar;
  • a cup of strong black coffee;
  • alcohol for impregnation (brandy, liquor, cognac);
  • vanillin and cocoa powder to taste.


Step by step recipe

You need to start cooking tiramisu with coffee. It's not a joke. Brew a cup of good strong coffee without sugar and let cool.

  1. Take the chilled eggs. Separate the whites from the yolks. Before whipping in proteins, it is better to add a pinch of salt. And put the dishes with them in cold water. so that they stay cold. In the process of whipping, add a couple of tablespoons of powder. The result should be a dense foam that does not spill out of the bowl.
  2. Beat the yolks whiten with the rest of the powder. To saturate the taste, you can add vanillin or vanilla essence, literally a couple of drops. Be careful not to get bitter. The final mixture should be almost white. Take the time and get a great result.
  3. Knead cream cheese separately. It is important that the product is as fresh as possible. When buying, pay attention to the date.
  4. Add the mascarpone to the yolks. It is better to mix with a spatula, so as not to spoil the structure. Stir very carefully until a homogeneous mixture is obtained. We continue mixing already with the proteins. Also carefully and manually. The main thing is that the mixture is homogeneous and without lumps.

The cream is ready - put it in the refrigerator to cool it. Now back to our coffee. It is necessary to pour a glass of cooked alcohol into it.

Before you continue cooking, you need to decide what you want to get in the end a cake or portioned cakes. Take molds or other dishes in which your dessert will cool.

First, spread the cream, the first layer should be thick. Put cookies on top. Before this, it must first be dipped in coffee with liquor. this must be done quickly, biscuit cookies easily absorb liquid and swell. We repeat this process until you fill out the forms or until the cookies run out. Top must be cream. Take a fine strainer and rub on top your masterpiece with cocoa powder.
