Turkish Lahmaxun or pizza in Turkish. This is a symbiosis of Italian and Arabic cuisines. The dish represents meat with a lot of spices served on dough. But as opposed to its Italian relative cheese is not added. To cook it people use fresh lemon juice, pomegranate syrup and of course culinary plants. 

The main ingredients are:

Minced meat

  • Minced mutton or beef – 250 g;
  • Butter – 75 g;
  • Onion – 2 pieces;
  • Tomato – 2 pieces;
  • Minced parsley – 3 tablespoons;
  • Salt, spicy red pepper – to taste.


  • Flour – 400 g;
  • Dry yeast – 10 g;
  • Warm water – 150 ml;
  • Salt, sugar – 1 teaspoon.

For processing the dough 

  • Milk – 30 ml;
  • Salt – 1 teaspoon.

Cooking method​ 

Knead the dough, for this you need: dissolve sugar, salt and dry yeast in warm water and leave for 10 minutes so that the mixture started “to work”. After this add sifted flour and knead the dough. Cover it with a dish towel and leave the dough in the warm place for 30 minutes (you can leave the dough for longed time, it only will be better). As soon as the dough has risen divide it into 6 parts and then leave “to rise” again. Meanwhile you may prepare the fitting. Cut finely the onion and mix it with the minced meat. Peel the tomatoes sinking them into boiling water. Cut finely tomatoes and parsley. Melt the butter. Put all ingredient of the minced meat into the basin. Heat up the oven to 220 degrees and form lahmaxuns. For this thinly roll out the dough, put it on the baking tray (that you have beforehand sprinkled with olive oil), grease it with milk and salt and put 1/6 of the fitting as all together we have 6 work pieces. Pinch together the edges of the dough to make the shape of a boat. You should do this so that the juice won’t flow out of the fitting. Close the oven and bake for 7-10 minutes. In the course of this time pizza in Turkish is ready.
