But in this case, truly Italian pizza has not lost its sophistication. Consider the recipe for a classic, Neapolitan pizza with marinara sauce.

Recipe

To make one pizza 30 cm you will need: 250 grams of tomatoes, 25 grams of Parmesan, 10 pcs of olives, anchovies, capers, 2-3 branches of basil, 2 cloves of garlic, 3 tablespoons of olive oil, oregano, thyme, sugar, salt. For the preparation of the dough: 2 cups of wheat flour, 5 g of yeast, 1/3 tsp of salt, 2 tsp of sugar, 2-3 tablespoons of olive oil.

Preparation begins with kneading the dough. The secret of its preparation is the right flour. In Italy, flour from durum wheat is used. It is this kind of flour to find we have difficult, so we recommend using the coarsely ground wheat, which is grinded together with the shell.

The flour is sieved and yeast, salt and sugar are added to it. Then a glass of water is poured in. The second glass of water should be heated in a microwave for 10-12 seconds, then add olive oil to it. Mix everything and add to the flour. After that, you knead the dough, gradually adding flour until it stops sticking to your hands. When it is ready, roll it into a bowl and cover with a tissue napkin. Leave it for 40 minutes in a warm place to get it up. After that, you stretch the workpiece with your hands to the desired diameter, if you do not have enough skill for this, use a rolling pin.

Let's start preparing the sauce. To do this, the tomatoes need to peel and remove the seeds. In the upper part they are cut with a knife and smashed with boiling water. Thus, to remove the skin without damaging the flesh, it is possible in a few seconds. After that, tomatoes are cut in half and from them you need to remove the bones. After that they are rubbed into a paste and mixed with olive oil, basil, sugar and salt. Excess liquid must be drained and put the paste on the cake. After that, put the garlic. For this, the denticles are cut along along thin, almost transparent plates. Then cut with olive rings and also spread on the workpiece. Add anchovies and capers. Sprinkle everything with thyme, oregano, grated cheese, sprinkle with olive oil and bake for 20 minutes at 200 ° C. Pizza is served with whole leaves of basil, cut into an even number of pieces.
